In a large roasting tin, add olive oil, sweet potato, Brussels sprouts, garlic, dried thyme, cumin, salt, and pepper, then toss to coat fully. Roast for 40-45 minutes until vegetables are brown and fork-tender. Place in a serving bowl, toss with 1-2 tablespoons red wine vinegar to taste, and garnish with sesame.
